One downside to this is that the BBQ sauce gets too oily. However, there is a solution to this, as you can use a fat separator to remove the oil from the BBQ sauce right before serving.
Cooking Time in Instant Pot

Note that this is applicable to 4 pounds of pork shoulder, as this is what I use in this recipe.
- 4 pounds pork cut into 8 pieces – cook for approximately 60 minutes.
- 4 pounds pork cut into 4 pieces – cook for approximately 65 minutes.
- 4 pounds pork cut into 2 pieces – cook for approximately 75 minutes.
Ensuring you have a Brown Pork Shoulder

- 4 pounds boneless pork shoulder (divide into 2, 4, or 8)
- 2 cups of BBQ sauce (divide into two and use the other part for serving)
- 1 tbsp vegetable oil
- ½ cup water
Instructions
- On your instant pot, click on Saute to preheat the cooker. After getting hot, add the vegetable oil to the pot and brown the pork on either side, with each side taking about 2 minutes and 30 seconds.
- Add 1 cup of BBQ sauce and ½ cup of water to the pot, and stir well.
- Add the browned pork to the pot.
- Close the lid, select high pressure, and set the cooking time to (60 minutes for 8 pieces cut), (65 minutes for 4 pieces cut) and (75 minutes for 2 pieces cut).
- After the end of the cooking, turn off the instant pot and allow the pressure to release naturally for about 20 minutes.
- Carefully remove the lid after the valve must have dropped. Remove the meat from the instant pot and shred it with a shredder claw or two forks, and discard the excess fat as you are shredding it.
- Separate fat from the juices with a fat separator or by strain cooking the liquid (reserve ½ cup of the liquid).
- Place the shredded pork back into the cooking pot, and pour the remaining 1 cup of BBQ sauce and the ½ cup of liquid. Stir frequently to get them to mix well and bring to a simmer.
